Using Robin Hood Gluten Free Flour

In the 30 years that I have been cooking gluten and dairy free, I have tried many different flour combinations.  There is no question that a mixture of different flours produces the best baked goods.  Recently, I bought, for the first time, the new gluten free mix made by Robin Hood.  This company has been making flour for generations and has now created a gluten free mix that is sold right alongside their regular flours.  I found it on sale for half price so I thought I would give it a try.  I used the chocolate chip cookie recipe on the package to test it out as cookies are the most difficult gluten free items to make.  They are often crumbly and difficult to remove from the cookie sheet in one piece.

I was delighted to discover that this flour mix works well and those sampling my cookies were impressed.  They came off the cookie sheet easily and are the closest taste to regular cookies that I have ever made.  So, If you are baking gluten free and are looking for some extra convenience, give this mix a try.  I have only baked this one item so far but the results were so good that I am confident that other items will taste equally delicious.  I still marvel at how mainstream this has all become.  Enjoy!
